French Lentil Soup

Warm up with this delicious and healthy soup, perfect for any season.

Ingredients

  • 1 cup green or brown lentils, rinsed and drained

  • 1 large onion, chopped

  • 2 carrots, diced

  • 2 garlic cloves, minced

  • 6 cups vegetable broth

  • 1 can (14.5 oz) diced tomatoes

  • 2 tablespoons olive oil

  • Salt and pepper to taste

  • Optional: 1 teaspoon dried thyme
     

Prep

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and diced carrots. Cook, stirring occasionally, until the vegetables are softened, about 5-7 minutes.

  2. Add the minced garlic to the pot and cook for another 1-2 minutes until fragrant.

  3. Stir in the lentils and the can of diced tomatoes (including their juices).

  4. Pour in the vegetable broth and optional dried thyme. Season with salt and pepper to taste.

  5. Bring the soup to a boil, then reduce the heat to low. Cover and simmer for about 30-40 minutes, or until the lentils are tender.

  6. Taste the soup and adjust the seasoning if necessary. If the soup is too thick, add a little more broth or water to reach your desired consistency.

  7. Serve hot, optionally with a slice of whole-grain bread on the side.
