Spaghetti Squash Marinara
This spaghetti squash recipe might be just as delicious and hearty as a bowl of pasta. Put it in a bowl or eat it straight out of the squash itself!
Servings: 2
What you’ll need:
1 spaghetti squash
1 ½ cups marinara sauce
2 tablespoons olive oil
5 oz shredded mozzarella cheese
Salt and pepper to taste
Directions:
Preheat oven to 375°F
Cut the squash in half and scoop out all the seeds.
Place halves with cut-sides down on a baking sheet lined with parchment paper.
Roast for about 40 minutes, until tender.
Use a fork to shred the squash, keeping the shredded squash inside its skin.
Mix together marinara sauce, tomato paste, olive oil, salt, pepper, in a bowl.
Divide the mixture onto the two squash halves and mix it in with the shredded squash.
Top the squash halves with mozzarella and then put it back in the oven for another 15 minutes. Enjoy!
Thrive Tip: Add some sliced grilled chicken or a filet of grilled salmon to your squash to make this a well-balanced meal that will keep you full!
