  • Brown rice

  • Frozen vegetables

1. Creamy Chicken Salad

INGREDIENTS:

  • Chicken breast

  • Plain unsweetened yogurt

  • Canned cannellini beans

  • Olive oil, salt, and pepper

INSTRUCTIONS:

1. Cook the chicken breast and shred it.
2. In a bowl, mix plain yogurt with a bit of olive oil and salt and pepper to taste.
3. Fold in the shredded chicken, and drained and rinsed beans.
4. Serve chilled on whole grain bread or over a bed of lettuce, or eat it on its own!

  • Frozen mixed vegetables

  • Olive oil

INSTRUCTIONS:

1. Cook chicken breast seasoned with salt and pepper, then slice it.
2. Cook brown rice or whole grains on the stove.
3. Sauté frozen vegetables in olive oil until heated through.

• Canned cannellini beans

• Frozen mixed vegetables

INSTRUCTIONS:

1. Drain and rinse cannellini beans, mixing them with olive oil and salt.
2. Blend yogurt with olive oil, salt, and pepper to create a dressing.
3. Thaw the mixed vegetables and roast them in the oven or air fryer.
4. Once the vegetables are cooked, mix them with the cannellini beans and then mix in the dressing.
